Rabbit with herbs


Ingredients for 6 people:
• 1 rubbit cut in pieces
• 150 gr of green and black olives
• 150 gr of cherry tomatoes
• 1 glass of white wine
• 1 bay leaf
• 1 bunch of herbs
• Butter
• Salt
• Pepper

Difficulty: Medium
Preparation time: 60 minutes

In a saucepan heat the butter and allow the rabbit to brown. Add salt, pepper and white wine letting it evaporate over high heat, then add tomatoes and bay leaf.
Pour in the hot stock and cover. Cook on a medium heat, if needed add more stock . After 25 minutes of cooking add the olives and herbs and cook for 30 minutes.
